Established in summer 2015, Aviate was born with the simple premise of putting our hometown of Birmingham, Alabama’s airport code on a ball cap. Suddenly, new cities were being added what seemed like weekly, and Aviate was taking flight. For millions of travelers, these three-letter airport codes instantly evoke memories of journeys past, the anticipation of adventures to come, and the satisfaction of heading home. Aviate is built on this idea of community.
Tropicaleo was born out of necessity. After relocating to Birmingham, Isabel, who owns the restaurant with her husband Gabe, started to notice a stark lack of Puerto Rican food. After cooking for friends, the couple decided to share their cuisine with their neighborhood. That summer they got a spot at the local farmers market with the plan to sell tostones. They thought a few people would enjoy trying the food, but they weren’t expecting much. After having the longest line at the market, they knew people wanted what they were offering: something unique, made with fresh ingredients.
Isabel and Gabe are food allergy parents, and they are committed to running a restaurant that’s safe for anyone to enjoy. Here’s how:
